THIS MEANS THAT THERE ARE NO ADDITIONAL COMPONENTS ADDED AFTER THE FERMENTATION SUCH AS BREWER’S ALCOHOL IN ORDER TO ALTER THE TASTE AND STYLE. JUNMAI SAKE IS USUALLY ROUNDER AND FRUITIER AND THE RICE IS MILLED TO 70% OR MORE POLISHING RATIO (THE AMOUNT OF THE GRAIN LEFT BEHIND).

Refreshing and bold with a lovely amino filled length, and umeboshi (Japanese plum); sea breeze and seaweed. Complex and supremely balanced. Absolutely superb!
